Solstice cookery

Marked the summer solstice by cooking up a batch of courgette risotto. But thanks to an unfortunate measuring error — I neglected to halve the quantities — I now have a massive glut of the stuff on my hands and I think I'm going to be heartily sick of it by the time the week is done.
