Tramp and Stephen Fry

I liked the puns — "Genius that scored in National having placed outside bet (6)" and "A nerdier scientist rearranged drawer in house? (6,2,9)" — and the Abramovich clue but I'm still not entirely sure how to solve "It would make Angus flip to take in recipe by first-class cook (6)". I know that the clue is cook, that Angus is a cow, and that the answer must be "braise" but I don't know how I'm supposed to get to it...
ETA: I've checked the answers and the solution is that BSE would make Angus flip, that a recipe is R and first-class is A1. Easy once you know how.
