Vegan risotto

I'd originally intended to make a baked pasta thing, but I realised too late that there wasn't enough penne to do it. Instead, I decided to make risotto, but I realised too late that there wasn't any Parmesan. I finally found myself forced to settle on vegan risotto, made with nutritional yeast instead of cheese.
And you know what? It was good. Surprisingly good. It was almost, y'know, edible.
