Beetroot and apple soup

It was surprisingly hassle free, although I had to compromise slightly on some of the ingredients, substituting cooked beetroots for raw and foregoing the star anise altogether, after I tried and failed to find any at my local supermarkets.
The results were extremely good. The combination of beetroot and apple worked extremely well and wasn't nearly as sweet as I'd thought it might be, while the caraway gave it a nice tasty edge. Best of all I managed to make the stuff without staining myself bright red with beetroot juice — something I did once, long ago, and which has left me extremely weary of handling the stuff without gloves and an apron...
