Grapefruit marmalade
Nov. 19th, 2011 08:57 pmFun day spent juicing, shredding, boiling and decanting after a sudden impulse to whip up a batch of grapefruit marmalade. The process of waiting for the set point as nerve-wracking as ever: a constant worry that the stuff won't set properly, leaving me with a huge cauldron full of sugary fruit syrup to deal with. But things eventually seemed to firm up — although not as much as I'd hoped, possibly because I didn't add enough lemon juice — so now all I have to do is sit back and wait to see if it really is going to set or not.
ETA: The overnight set is rather softer than I'd have liked, but at least it isn't completely liquid...
