Vegan flapjacks
Sep. 5th, 2015 04:45 pmFor no terribly good reason, a sudden impulse decision to try a new vegan flapjack recipe. Unlike most recipes, this substitutes stewed apple and mashed banana for the golden syrup, sugar and butter binding of the standard version, and for no terribly good reason, I decided to use pumpkin seeds in place of the recommended dried fruit.

The results were surprisingly good. Not as a sweet as normal flapjacks and, yes, somewhat heavier and chewier — none of which are bad things in my book — and just the thing to see me through my early evening run...
