The problem, it transpired, was actually pretty basic: the in-core partition information was wrong, despite the on-disc information being correct. The solution? Dump the on-disc information to a file, reinitialise the labels on the disc, update the partition information using the saved configuration and, voilà, all the slices were back and usable once again.
