Bagel baking
Aug. 12th, 2014 06:25 pmHaving decided to follow Felicity Cloake's guide to making the perfect bagel, I realised partway through that I'd failed to include the 18-24 hour fermentation period and that I wasn't going to be able to eat the results until tomorrow. Oops.
I also think I messed up the shaping process. It wasn't until I found a video of a professional doing it that I got the thing about rolling it on the surface to seal it, so I suspect mine are going to come unstuck when they finally hit the cooking stage...
